Sanoma Valley - Extended Aging

100% Chardonnay



Fermentation: Whole Cluster Press, settle in the tank, racked to concrete tank, stainless steel drums, and neutral oak barrels for fermentation. Peak tem 58 degrees. No ML conversion

Aging: 50% Concrete, 40% Stainless Steel, 10% Neutral Oak for 6 Months


We produced two Chardonnay wines in 2021 from Sangiacomo Roberts Road. This offering is inspired by the wines of Chablis, where oak and malolactic fermentation are used sparingly to retain a more vibrant, crisp style showcasing the brighter side of Sonoma Coast Chardonnay. Concrete is used to round the edges without the impact of oak flavors. The stainless steel portion is the purest expression, while a small percentage of oak is used to create nuance. When you pop this wine you are drinking what the winemakers drink.
